Summary
At NUTRITION 2025, the American Society for Nutrition featured over 1,500 research studies highlighting advances in global public health, clinical nutrition, and food policy. Major focus areas included managing lean muscle mass and micronutrient adequacy alongside GLP-1 weight-loss medications, as well as emerging research on ultra-processed foods, precision nutrition, and the relationship between sleep quality and cardiometabolic health. Prominently presented poster research demonstrated the high cost-effectiveness and population-level health impact of large-scale food fortification. Specifically, systematic reviews and global tracking data revealed that mandatory folic acid fortification of grains significantly decreases neural tube defect prevalence, while micronutrient-fortified cow’s milk substantially improves dietary intake and reduces anemia in children aged 0–5 years. Overall, economic evaluations confirmed that large-scale fortification with essential vitamins and minerals remains one of the most cost-effective global health interventions available
